Chef Michel Nischan wears many hats- from dynamic
restaurant owner, award-winning cookbook author and
media personality- to food policy activist and non-profit
foundation CEO.
A proponent of sustainable farming, local and regional
food systems and heritage recipes, Michel has long been
a leader in the movement to honor local, pure, simple
and delicious cooking, which he now serves daily at
Dressing Room, his homegrown restaurant in
Westport CT.
Michel’s “cuisine of well-being”, which was first served
at Heartbeat Restaurant at the W Hotel in
Manhattan, is now featured at Pure, India’s
first organic restaurant located at the Taj Land End
Hotel in Mumbai.
His recipes and philosophies may be explored in his
award-winning cookbooks – Taste Pure & Simple
(James Beard Award 2004) and Homegrown Pure & Simple.
It is
now
Wholesome Wave Foundation that seeks to make
life healthier, tastier, more meaningful and accessible
to all through locally and sustainably grown food, and
whose current projects include two CT farmers markets
and a
metro New York City farm-to-college dining program.

My dear friend and
brightest inspiration, Paul Newman, passed away
Friday, September 26, 2008. I will sorely miss
Paul for his impact on my life and work. His
kindness, thoughtfulness, humor, and generosity
are timeless. My fervent wish is to see Paul’s
legacy celebrated and strengthened in the
charities he supported, especially the Hole in the
Wall Camps, for which he cared so much.
